A new seasonal pairing experience begins today—featuring a refined sake matured at –5°C and two distinct sake accompaniments, each crafted to highlight contrasting flavors.

🍶 Katsuyama “Hyōjuku” Junmai Daiginjo

Founded in 1688 as the official brewery of the Date clan, Katsuyama Shuzo is the only surviving sake brewery with that heritage in Miyagi Prefecture. With over 300 years of history, it stands as a symbol of refined craftsmanship in the region.

Dedicated exclusively to premium sake production, Katsuyama has introduced rare innovations—such as the use of centrifugal separation—to achieve extraordinary precision, while still honoring the intuition and skill of its master brewers. These efforts have earned the brewery numerous international awards, including at IWC and Kura Master.

The “Hyōjuku” Junmai Daiginjo is the embodiment of Katsuyama’s brewing philosophy. Made from rice polished down to 35%, it is aged slowly at –5°C, resulting in a sake of unparalleled clarity, with a graceful balance of umami and delicate aromatics.

・Smoked Bonito “Prosciutto”

Carefully selected bonito from Kagoshima—renowned for its katsuobushi—is marinated in a house-made sauce and repeatedly smoked, yielding deep umami and an elegant smokiness in every bite.

・Candied Tanba Black Soybeans
These plump black soybeans (2L grade and larger) are gently glazed to bring out their natural flavor. Their supple texture and subtle sweetness pair beautifully with the elegant character of sake.
