Katsuyama DIAMOND AKATSUKI

A Junmai Daiginjo polished down to 35%, served over crushed ice for a cool and elegant experience.

Brewed exclusively from “Special A” grade Yamada Nishiki rice grown in Hyogo Prefecture, this luxurious sake is defined by its pure, concentrated umami and gentle sweetness.

Katsuyama, founded in 1688, is the only remaining brewery in Miyagi Prefecture that once served as the official purveyor to the Date clan. With over 300 years of heritage, the brewery is known not only for its history, but also for embracing innovation—being one of the few in Japan to employ centrifugal separation technology for ultimate brewing precision.

DIAMOND AKATSUKI is the flagship label of Katsuyama’s ultra-premium collection. Crafted with meticulous care and cutting-edge technique, it lives up to its name “Diamond Dawn.”

While some may hesitate to serve such refined sake with ice—much like with fine wine—this chilled presentation comes at the recommendation of the brewery itself. We invite you to enjoy it as they intended: crisp, vibrant, and perfectly suited to the season.
