As 2025 draws to a close, we are delighted to present a tasting set perfectly suited to this festive season—one filled with celebrations from Christmas through the New Year, and brimming with a sense of anticipation and delight.
At its heart is Clase Azul, a premium tequila ideal for gifting, paired with an exceptional serving of karasumi—meticulously crafted by the two-Michelin-starred Japanese restaurant Oryori Sato.
Karasumi, one of Japan’s three great delicacies, appears in late autumn and winter and has earned its place as a quintessential year-end indulgence. Irresistible for aficionados of fine drinks, this treasure promises an entirely new and unexpected harmony when enjoyed alongside tequila.
<Clase Azul Tequila Gold>
A masterfully blended tequila inspired by the colors of the Mexican sunset. Built upon a base of Plata, it combines Reposado matured in French oak and Extra Añejo aged eight years in American whiskey casks before a sherry-cask finish.
The result is a beautifully balanced tequila with a sumptuous mouthfeel and deep, resonant flavor. Its decanter—combining shimmering glass with jet-black ceramic—evokes the breathtaking moment when the sun sinks into the vast Mexican horizon, romantic and unforgettable.
<Clase Azul Mezcal San Luis Potosí>
Produced using traditional methods handed down for over two centuries in a small artisan community in the state of San Luis Potosí in central Mexico. Made from locally grown Agave Verde, it reveals a spiced, clove-tinged profile with herbaceous notes—an impeccable match for the Christmas season.
The mineral-driven finish is remarkably elegant. Each cap, handcrafted by artisans, features a vividly embroidered Mexican red warbler—believed among Indigenous communities to be a spiritual guardian—soaring across a mystical night sky.
Karasumi by Oryori Sato
For over 30 years, Oryori Sato has been a culinary landmark in Kokura, Fukuoka. Chef Yoshimi Sato, the restaurant’s two-Michelin-starred master, prepares this delicacy with extraordinary care.
Roe harvested in early autumn is salted and slowly cured, with excess moisture meticulously removed. The result is a sublime expression of concentrated umami, a supple yet gently chewy texture, and a refined salinity that elevates the purity of the ingredient itself—truly an exquisite taste experience.
