Chilled & Warmed Sake “non°(nondo )” Tasting


In Tono, Iwate, the brewery nondo (non°) is devoted to rice and fermentation, cultivating its own rice without pesticides or fertilisers and brewing with a steadfast commitment to purity.

This February, we present the brewery’s flagship expression, The Emotions of the Rice Fields, widely regarded as a pioneering work in the world of craft sake. Following last year’s great response, it will be offered at two temperatures — chilled and gently warmed — revealing two distinct personalities.

This is an exceptional sake whose defining feature lies in a three-stage fermentation and maturation process that transcends conventional sake-making.

In addition to rice-based fermentation, the brew incorporates rice bran in the preparation, followed by over 150 days of long-term fermentation in wooden vats. It is then transferred to wine barrels for approximately one year of tertiary fermentation and maturation.

Through this process, layers of rice-derived umami unfold alongside deep, structured acidity, subtle barrel nuances, and a long, evolving finish, creating remarkable dimensionality.

In the glass, delicate aromatic lift gives way to grain-like nuances, while on the palate, a fine, gentle effervescence and intricate acidity provide structure and definition.

Unlike many aged sakes that lean toward caramelised notes, this expression is defined by complex, multi-layered acidity that evolves with every sip, offering new facets as it opens.

A true collaboration between nature and human craft — a sake that captures the passage of time in the rice fields.
