The Macallan Sherry Oak 30 Years Old, 2024 Release | Three Decades in Sherry-Seasoned Oak

Three decades of maturation shaped by the character of sherry-seasoned oak from Jerez.

The Macallan Sherry Oak 30 Years Old, 2024 Release is a 30-year-old single malt Scotch whisky from The Macallan Distillery in Speyside, Scotland. At the top of the Sherry Oak range, it is matured predominantly in European oak casks seasoned with sherry in Jerez, Spain, where oak and spirit develop together over an extended period.

For the 2024 release, The Macallan highlights ginger, orange and wood spice as key flavour cues. Its deep mahogany colour and long, rich finish are also central to the distillery’s description of this expression.

A 30-Year-Old at the Pinnacle of the Sherry Oak Range

The Macallan Sherry Oak range is built around oak casks seasoned with sherry in Jerez de la Frontera, in Andalusia, Spain. After the casks have been seasoned with sherry, they are transported to Scotland and filled with The Macallan’s new make spirit.

For a 30-year-old expression, the spirit remains in cask for three decades. During maturation, oak contributes not only aroma and flavour but also much of the whisky’s natural colour. The Macallan places particular emphasis on the sourcing of oak, cask construction, toasting and seasoning, treating cask management as a central part of its whisky-making process.

Sherry Oak should not be confused with the Double Cask range, which brings together American and European oak. The official description of the 2024 Sherry Oak 30 Years Old places European oak, seasoned in Jerez, at the centre of its character.

The Influence of Sherry-Seasoned Oak from Jerez

The identity of Sherry Oak comes not simply from the type of oak, but from the seasoning process the casks undergo. The Macallan’s casks spend time in Spanish bodegas with sherry before being emptied and sent to the distillery in Speyside, where they are filled with new make spirit.

As the whisky matures, the cask contributes elements associated with dried fruit and spice, as well as natural colour. The Macallan describes the 30 Years Old as having the deepest dark mahogany colour in the Sherry Oak range.

Colour alone, however, is not a measure of age or quality. The distillery’s emphasis is on the selection and careful management of oak casks, and on the gradual integration of spirit and wood over many years.

Ginger, Orange and Wood Spice

The official flavour cues for the 2024 release are “Ginger. Orange. Woodspice.” Warm ginger, the brightness of orange and the layered influence of oak spice provide a concise guide to the whisky’s profile.

In the visual interpretation created with photographer Erik Madigan Heck, honeyed figs, chocolate orange and a subtle hint of cinnamon are used to evoke the complexity of the 30-year-old whisky. These are motifs in the photographic interpretation; read alongside the distillery’s stated flavour cues, they help convey the rich, sherry-led character of the expression.

The Macallan describes the whisky as smooth, with a long and rich finish. The depth developed through extended maturation is framed by ginger, orange and wood spice.

Erik Madigan Heck’s Visual Interpretation of the 2024 Release

For the 2024 Sherry Oak 30 Years Old, photographer Erik Madigan Heck translated the whisky’s flavour and colour into a visual composition. Warm amber and mahogany tones represent the colour of the spirit, while the soft focus suggests its long, rich finish.

Known for treating photography as a painterly medium, Madigan Heck also created abstract photographs at The Macallan Estate, drawing on nature as a subject. His work extends the story of the Sherry Oak range beyond the whisky itself, connecting the finished spirit with the natural materials and landscapes behind it.
