Clase Azul Mezcal Durango | Wild Cenizo Agave and Three Days of Pit Roasting

Wild Cenizo agave, slowly roasted for three days with firewood and volcanic rock: a mezcal shaped by the land and traditions of Durango.

Clase Azul México Mezcal Durango is made from rare Cenizo agave that grows wild in the state of Durango in northern Mexico.

Mineral-rich soil, natural spring water and traditional pit roasting with firewood and volcanic rock come together in a mezcal designed to express the character of its region as much as the agave itself.

Rare wild Cenizo agave from Durango

The defining ingredient is Cenizo agave, a rare agave variety that Clase Azul describes as growing wild in Durango.

While tequila is made from Blue Weber agave, mezcal can be produced from different agave species, allowing individual regions to express themselves through different plants.

For this expression, Cenizo is inseparable from the highlands and semi-arid landscape of Durango.

Three days of roasting with firewood and volcanic rock

After harvest, the agave hearts are slowly roasted for three days in hand-dug pits with firewood and volcanic rocks.

The process develops the sugars in the agave while creating the smoky character associated with traditional mezcal production.

Clase Azul also highlights Durango’s mineral-rich soil and natural spring water as important contributors to the spirit’s distinctive complexity.

Citrus, herbs and green olive — more than smoke

The colour is brilliantly clear with silver highlights.

The official aromatic profile includes citrus, herbal notes, green olive, cooked agave and clove.

Rather than presenting mezcal simply through smoke, Durango combines vegetal freshness, bright citrus and spice with the deeper aroma of cooked agave.

Peanut, unrefined brown sugar, smoked wood and chocolate

On the palate, Clase Azul describes peanut, unrefined brown sugar, smoked wood and chocolate, together with hints of ripe fruit.

These sweet and roasted notes give the mezcal a broader profile than smoke alone, combining agave, sweetness, fruit and wood.

It is bottled at 44% ABV, with a full body that preserves the character of the agave.

Two traditions of handcraft in one dark decanter

As with many Clase Azul releases, the decanter is part of the cultural expression of the spirit.

The dark, textured body is inspired by the raw beauty of black clay.

Its carved design is created by hand by artisans from a small community of the Mazahua people.

The brightly coloured cap is created by Wixárika artisans, who apply individual beads using beeswax and resin.

The contrast between the matte black body and the vivid beadwork makes the decanter as distinctive as the mezcal inside.

Durango, Guerrero and San Luis Potosí: three regional expressions

Clase Azul’s mezcals express different Mexican regions through different agaves and craft traditions.

Durango is centred on wild Cenizo agave, while Mezcal Guerrero uses Papalote agave and Mezcal San Luis Potosí uses green agave.

Even within the same Clase Azul mezcal family, the agave, landscape, flavour profile and cultural references of the decanter change from one state to another.
