
Clase Azul Mezcal San Luis Potosí | Agave Salmiana, 12 Years in the Desert
On the semi-desert slopes and plains of San Luis Potosí, Agave salmiana takes around 12 years to reach maturity.
Clase Azul Mezcal San Luis Potosí is an unaged artisanal mezcal made from 100% green agave — Agave salmiana — native to this central Mexican state.
Its profile is distinctly herbal and mineral: cooked agave and caramel are joined by green chile, freshly cut grass and wildflowers, followed by lime zest, clove and a dry, spiced finish.
Agave salmiana: around 12 years to maturity

The spirit begins with Agave salmiana, known locally as green agave and native to the semi-desert landscapes of San Luis Potosí.
According to Clase Azul, the plant reaches maturity at around 12 years of age in its natural environment, by which point it can grow to nearly five feet tall.
Its development depends on temperature, soil composition and water availability. Years spent in this dry landscape help shape the herbaceous, mineral-driven character that distinguishes the finished mezcal.
A mezcal tradition preserved in Estación Ipiña
The mezcal is produced in Estación Ipiña, a small community in southeastern San Luis Potosí.
Clase Azul’s Japanese release materials describe a local mezcal-making tradition passed down for more than 200 years.
The identity of the spirit therefore comes from more than its agave variety. It reflects a combination of regional raw material, inherited production knowledge and the dry landscape in which both developed.
Steam-cooked, tahona-milled and distilled in copper
Clase Azul Mezcal San Luis Potosí does not rely on heavy smoke as its defining feature.
The agave is steam-cooked in vaulted brick ovens, then milled and extracted using a traditional tahona stone wheel.
After fermentation, the spirit is distilled in traditional copper stills.
This process allows the green, vegetal side of Agave salmiana to remain prominent, giving the mezcal a fresher and more mineral profile than the intensely smoky style many drinkers associate with the category.
Green chile, cut grass, wildflowers and lime zest
Clase Azul describes the colour as crystal clear with silver highlights, with a full body.
The aroma brings cooked agave, caramel, green chile, sweet fruit and freshly cut grass, with subtle wildflower notes.
On the palate, an herbal opening is followed by caramel, lime zest and clove.
The finish is mineral and spicy, tying together sweetness, green vegetal notes, citrus and spice in a profile closely associated with the high-desert character of San Luis Potosí.
A red decanter inspired by the Huachichil
The story of San Luis Potosí is also expressed through the decanter.
Its deep red ceramic colour pays tribute to the Huachichil, nomadic people who once moved through the desert landscapes of the region.
The name “Huachichil” is commonly translated from Nahuatl as “red-painted heads”, referring to the practice of colouring the head and face with red pigment.
Carved motifs around the base evoke the plains and mountains of San Luis Potosí, together with the green agave that grows across the region.
More than three hours of handwork for the cap
The cap is one of the decanter’s most distinctive details.
According to Clase Azul, it is handmade using a coloured-yarn appliqué technique, and each piece requires more than three hours of meticulous work.
The design depicts a desert landscape of mountains and valleys watched over by bright red finches — imagery connected to the stories and symbolism of the Huachichil people.
As with other Clase Azul releases, the vessel is conceived as part of the expression itself: spirit, landscape and Mexican craftsmanship presented as one object.
Pairing: goat cheese, fruit and chocolate
Clase Azul suggests pairing the mezcal with aged or fresh goat cheese and requesón.
Recommended fruit and savoury pairings include red plum, lychee and green olive, while white or ruby chocolate can highlight the spirit’s sweeter side.
The combination of herbal character, mineral structure and citrus spice gives the mezcal enough contrast to work particularly well with salty, acidic and gently sweet flavours.
