August Special – Kyoto Gin Experience

The Kyoto Distillery is celebrated for crafting premium gin infused with the distinctive botanicals of Japan.

Featured on IMAMI’s August tasting menu is a comparative tasting of two of the distillery’s signature expressions: KI NO BI, its flagship gin, and KI NO TEA, created in collaboration with a long-established tea house in Uji.

Crafted on a base of rice spirit, KI NO BI is distilled with eleven carefully selected botanicals, including gyokuro green tea, yuzu, Japanese red pine and sansho pepper. While rooted in the crisp, classic style of a London Dry Gin, it reveals vibrant notes of fresh yuzu alongside the bright, refreshing character of sansho, evoking the cool serenity of a bamboo grove.

Building upon the character of KI NO BI, KI NO TEA offers an even deeper expression of Japanese tea.

Created in partnership with Horii Shichimeien, a long-established tea house in Uji, it is distilled using the essence extracted from a bespoke blend of gyokuro and tencha prepared exclusively for the gin. The refined sweetness of these exceptional teas lends the spirit an unexpected elegance, with delicate nuances reminiscent of white chocolate.

To accompany the tasting, we have selected Kohaku Yuzu from Eirakuya, a historic Kyoto confectioner established in 1911. One of the house’s signature creations, it is crafted with meticulous care using just four carefully selected ingredients.

Its refined appearance and delicate flavour are matched by an exquisite texture: a fine sugar coating that shatters like a sheet of thin ice, giving way to a smooth agar jelly beneath, offering a fleeting sense of coolness on the palate.

Enjoy the harmony between the bright, fragrant character of Kito Yuzu, grown beside the crystal-clear rivers of Tokushima and harvested entirely by hand, and the delicate botanicals of the gin.
