Champagne Salon 2002 | The Singular Chardonnay of Le Mesnil-sur-Oger
One grape variety, one village, one year — and a Champagne made only when the vintage is worthy of it.
Champagne Salon 2002 is a Blanc de Blancs made exclusively from Chardonnay grown in the Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs.
Salon is built around singularity: one grape, one terroir, one cru village and one vintage. Extended cellar ageing turns that deliberately narrow concept into a Champagne of remarkable depth and precision.
The singular idea behind Champagne Salon

Champagne Salon was created in the early twentieth century by Eugène-Aimé Salon.
The first vintage was 1905. Originally made for Salon himself and his circle of friends, the wine was not released more widely until the 1920s.
The philosophy remains unusually strict: 100% Chardonnay, from the Côte des Blancs, from the Grand Cru village of Le Mesnil-sur-Oger, and from a single outstanding vintage rather than a blend of different years.
The fruit comes from the house’s one-hectare Jardin Salon and nineteen other small parcels in Le Mesnil-sur-Oger selected for the house.
2002: a vintage Salon calls its icon
Salon describes 2002 as a vintage that embodies the house at its clearest.
In Champagne, and particularly in Le Mesnil-sur-Oger, the season alternated between cool and warm conditions, rain and dry weather. Yet there were no severe frosts, destructive downpours or significant hail, leaving the vineyards exceptionally healthy.
Flowering suggested a potentially large crop, so careful growers reduced yields. Warm, sunny summer weather then concentrated the fruit and brought maturity and acidity into balance.
Harvest in Le Mesnil-sur-Oger began on 16 September. The Chardonnay was rich and powerful, yet retained the tension and precision central to the Salon style.
Vinification designed to preserve Chardonnay purity
The grapes are harvested and sorted by hand, and only the first pressing, the cuvée, is used.
Primary fermentation takes place in stainless steel. The wine sees no oak and does not undergo malolactic fermentation, helping preserve the firm acidity and linear structure of Chardonnay from Le Mesnil-sur-Oger.
Salon then spends many years ageing in bottle. The house typically gives the wine around a decade in its cellars before release, allowing complexity to develop without sacrificing tension.
Orange blossom, candied citrus and warm madeleine
The colour is pale gold with a faint green hue.
The nose combines orange blossom touched by honey, candied citrus and madeleine fresh from the oven.
On the palate, the wine is exceptionally fine and long, direct in shape yet full of energy. Power is held in check by restraint, giving the wine both tension and elegance.
It is rich without heaviness and incisive without becoming severe — a 2002 vintage in which ripeness, acidity and precision remain closely balanced.
Serve at 13–15°C
Salon recommends serving the 2002 at 13–15°C.
This relatively generous temperature allows the mature aromas and Chardonnay texture to open fully rather than being muted by excessive chilling.
Suggested pairings include lobster, scallop carpaccio, truffle risotto, Bresse chicken with cream and fish baked in a salt crust. Caviar, bottarga, aged Parmesan and fine Parma or Ibérico ham also suit the wine’s combination of salinity, creaminess and precision.
